I made these pops one day when I was craving pineapple sherbet but all I had in the house was boring old vanilla soy ice cream.
These are simple, refreshing, delicious and actually better than store-bought sherbet in my opinion. Plus, if you’re looking to make these healthier, it’s easy. Simply use tofu or yogurt in place of the ice cream.
Creamy Pineapple Vanilla Ice Pop Recipe
Makes: about 16 ounces of mix (see how many popsicle molds 16 ounces will fill)
- 2 cups fresh chopped organic pineapple – you can use canned, but fresh is WAY better.
- 1 teaspoon organic, Fair Trade vanilla extract.
- 1 cup organic vanilla soy ice cream.
Make your pops!
- Combine all ingredients in the blender.
- Blend well.
- Pour into molds.
Even if you’re not vegan, consider using soy, not cow’s milk ice cream in this recipe. You can use regular ice cream, but soy has a less intense flavor than cow’s milk ice cream, so the pineapple flavor really shines through.
