Your kids can eat these oatmeal berry pops for breakfast in the summer when it’s too hot to eat a warm breakfast. These also have the benefit of being hyper easy on busy mornings when you’re trying to get everyone off to camp or work.
Blueberry Oatmeal Popsicle Recipe
Makes: 12 to 15 ounces of ice pop mix, depending on how many blueberries you use. See why I post ounces vs. how many pops a recipe will make.
- 1/2 plus 1/2 cups of organic milk. Any milk you like will work – I used vanilla soy.
- 1/4 cup quick cook organic oats.
- 1/4 to 1/2 teaspoon pure vanilla extract.
- 1/4 tablespoon ground flax seed.
- 1 cup fresh organic blueberries. Set 1/4 cup aside, you’ll only add 3/4 cup to the blender.
- 2 tablespoons organic agave or honey.
*NOTE: you can use steel cut oats, if you like, but you’ll need to cook them about 20 minutes longer. Cook according to the directions on your oatmeal package.
Make your pops!
First you need to make your oatmeal.
- Heat 1/2 cup of milk slowly, on the stove top, until it reaches a slow boil.
- Mix the oats into the boiling milk, turn the heat down to medium and cook, stirring occasionally, for about 5 minutes.
- Mix your vanilla and ground flax into the oatmeal.
- Allow the oatmeal to cool down.
Next, make your blueberry + oat mixture.
- Combine cooled oatmeal with the other 1/2 cup of milk, your sweetener and 3/4 cup of blueberries.
- Blend well.
- Taste your mixture and see if it needs a sweetener. I only added 2 tablespoons of sweetener because my blueberries were very sweet. You may want to add more agave or honey depending on how sweet you like your oatmeal though.
Assemble your pops
- Divide the remaining 1/4 cup of blueberries among your ice pop molds.
- Pour the blueberry mixture into the molds, over the blueberries.
- Freeze overnight.
- Take your blueberry pops out of the freezer in the morning for a quick cold breakfast.
*SAFETY NOTE: If making these for a young child, you may want to consider omitting the whole blueberries due to choking hazards.
This recipe is very flexible. You can use yogurt instead of milk and use any fruit you like or hand on hand in place of the blueberries, such as strawberries, bananas, peaches or what have you. You can also mix in more grains or nuts if you like. I like flax, but wheat germ or ground almonds would be nice too.
