Watermelon popsicles are one of the best pops ever. They have a perfect shaved ice texture, even with zero added sweetener (rare) and are 100% refreshing on hot summer days.
- 4.5 cups chopped organic watermelon. If you can’t find organic watermelon, don’t panic. Watermelon has far fewer pesticides than most produce, so it’s okay to go conventional.
- 3/4 cup water.
- 3/4 cup fresh squeezed organic orange juice. I normally use orange juice if my watermelon is a little mealy. It’s better if you use pulp-free juice.
- A tablespoon or two of organic honey or agave. Only use added sweetener if your watermelon is a bit mealy or not quite as sweet as you like.
Blend everything in a blender. Pour into non-toxic popsicle molds. Freeze and then eat! Totally simple. You’ll get a varied amount of pops depending on how you measure your watermelon and if you add orange juice and/or sweetener. When I use a blender full of fruit + the water and juice I got enough ice pop mix to make all the watermelon pops shown below (about 5 big pops and 3 snack sized pops).
These ice pops are low-calorie but taste insanely good – so if you’re attempting to trim calories, these pops are the perfect way to go. You can eat more than one a day, because a full cup of watermelon only has about 45 calories.
Watermelon is delicious and nutritious, packed with plenty of good stuff, such as lycopene, vitamin A, vitamin B6, vitamin C and potassium.
